The challenge
Oxygen is wine’s main enemy. Air left in the vessel starts oxidation: the aroma fades, the colour darkens, the taste flattens. This is why modern winemaking uses nitrogen — to fill the headspace above the wine, to purge bottles and lines before filling, and to move wine from tank to tank.
Working from cylinders is most awkward exactly at harvest peak, when nitrogen runs out at the moment the line cannot afford to stop. Peradze Winery decided to produce its nitrogen on site.
The solution — a complete nitrogen system
A closed cycle was installed, from the compressor through to the nitrogen receiver:
- Nitrogen generator — built by IESCO, the first Georgian-made nitrogen generator
- Air compressor
- Air dryer
- Line filtration system
- Aluminium pipework
- Storage receivers
Why this chain
The heart of a PSA generator is a zeolite molecular sieve that traps oxygen from the air and lets nitrogen through. That sieve is poisoned by oil and moisture, which is why a dryer and filters upstream of the generator are mandatory. This chain is what decides whether the zeolite lasts ten years or a single season.
Aluminium pipework was chosen over black steel: it does not corrode, so it does not contaminate the nitrogen, it gives a low pressure drop, and it is easy to reconfigure when the plant expands.
The result
The winery now makes its own nitrogen, free of delivery schedules, cylinder logistics and seasonal shortages. The system produces exactly as much nitrogen as the process needs, and its only running cost is electricity.
